Get ready for an unforgettable 4-course whisky pairing dinner dedicated to the art of the perfect combination!
Each of the dishes prepared by our chefs is created to highlight the unique character of 4 iconic whiskys from the legendary Highland Park distillery known for its rich and smoky world. We have also added a complimentary amuse bouche to the menu combined with a HP10 YO welcome cocktail.
The whiskys we will try are Highland Park 12 YO, 15 YO, Highland Park Cask Strength 4 as well as Highland Park 18 YO. A special guest at the dinner will be Highland Park’s long-time global ambassador, Martin Markvardsen, who will share the secrets behind the whisky’s distinctive taste.

- Foie gras torchon with cocoa and pistachio on a sourdough cracker
- Cold Starter (paired with Highland Park 12 YO)
- Beef tenderloin carpaccio marinated in koji rice with gochujang and parmesan crumble
- Hot Starter (paired with Highland Park 15 YO)
- Fried pork ears with Hoisin sauce and jerk spice, celeriac-apple purée and pineapple chutney
- Main Course (paired with Highland Park Cask Strength 4)
- Deer with chocolate sauce, carrots confit and mushroom ragu
- Dessert (paired with Highland Park 18 YO)
- Pecan crumble, kumquat compote, whisky crémeux, dark chocolate mousse
Founded over 200 years ago, Highland Park originates from Orkney – a rugged but inspiring archipelago off the northeast coast of Scotland. Where trees struggle to grow because of the winds, the peat is infused with aromatic heather – a secret that gives the whisky its subtle, unique smoky character. Every bottle of Highland Park carries the complexity and depth that comes from aging in sherry-seasoned European and American oak casks. Preserving traditional techniques – such as hand-turning and drying the barley – ensures the authentic style that has brought the distillery worldwide fame.
